Has anyone used a silicone baking sheet to make fairy cakes before, I want to do Nice light fairy cakes>>? I used a silicone baking sheet to make muffins, and they came out fat and a little like they were fried.
Buy paper "Case Bun" from the supermarket - Put your mixture in their leaving enough room for expansion (I guess you overmixed muffins if they were fat)
I use individual cases of silicone when I do mine and they turn out to Nice and light. A good trick is to use a large metal spoon when folding in the flour - which should make them nice and light. I bake at 190 degrees for about 15-20 minutes - I poke a cocktail stick and if it comes out clean, I know they are made. Hope this helps :-)
