With children from college, our soldiers around the world, and to fill the lunch box, here are recipes for cookies that ship well and have good resistance in the lunch box. Whether you want to send cookies to your child in Afghanistan, Iraq, or the corner of their local school, these cookies should work for you. Try these Friends of peanut butter or nuts Apple Raisin Cookies, the next time you need to send cookies.


FRIENDS OF PEANUT BUTTER

1 cup creamy peanut butter
1 cup butter, softened
1 cup firmly packed brown sugar
2 / 3 cup light corn syrup
2 eggs
4 cups all purpose flour, divided
1 tsp tablespoon baking powder
1 tsp teaspoon cinnamon
1 / 4 c. salt

In a large bowl with mixer at high speed, beat butter, peanut butter, brown sugar, corn syrup, and eggs until smooth. Reduce speed and beat in 2 cups flour, baking powder, cinnamon and salt. With a wooden spoon, stir in remaining flour. Wrap the dough and refrigerate for 2 hours. On a floured surface, roll half the dough 1/8-inch thick. Cut with floured cookie cutters, shapes of your choice. Bake on an ungreased cookie sheet at 325 degrees for 10 minutes or until cookies are lightly browned. Cool on a rack. Garnish if desired.

Yield: About 2 1 / 2 dozen cookies.

BISCUIT APPLE RAISIN NUT

2 cups flour
1 tsp teaspoon baking soda
1 / 4 cup milk
1 egg
1 / 2 cup shortening
1 / 2 c. salt
1 / 2 c. cinnamon
1 / 2 c. nutmeg
1 cup brown sugar
1 cup raisins
1 1 / 2 cups apples
1 cup chopped pecans or walnuts

Preheat oven to 400 degrees.

In a large bowl, sift together flour and baking soda and set aside.

Put the milk, egg, shortening, salt, cinnamon, nutmeg and brown sugar in a mixer. Blend until smooth. Remove the mixture from the mixer and add to flour mixture. Mix well. Add grapes, apples and nuts to mixture and mix well. Drop by teaspoonfuls on a greased cookie sheet. Box 400 degrees for 10-12 minutes or until lightly browned.

Note: As with any shipment of food products, packaging and many ships arriving in a timely manner.
