At the recent Fiery Foods and Barbecue show in Albuquerque, we have done enough of Santa Fe chicken to serve 5000 guests. If that sounds like a daunting task, well, you're right. Where other vendors have been opening bags of chips for use in their salsa, we've maintained our philosophy that cooking food needs real estate. If we are going to be in the business of specialty foods, we'd better cook.

Where families go hungry and busy between baseball and school when they are hungry? Unfortunately, it's fast food permeates our lives. And soon, we're hooked on high-fat meal over the control of our lives. New Mexico Chile Company, we strive to make quality cooking sauces that people like you, can be used in a meal every day. We bring the gourmet meals and all you have to do is put the chicken in this dish!

Last month, three hundred pounds of chicken, onions and cilantro thirty clusters of fifteen went to the power of our customers, but the results have been impressive.

Many satisfied customers are left with our green sauce and a new recipe. There is something magical happens when the chicken responds green chili and cheese. The flavors blend, become one. The ferocity of Chile Green gives way to a statement more pronounced flavor, which allows the protein to be known. Each year we receive hundreds of requests for the recipe. Some say their children have become addicted to the flavors and we think it's a good thing. In the hectic world soccer, baseball and Scouts, we are happy to produce and promote quality food products.

As with all our recipes, the gourmet meals that can be accomplished in thirty minutes.

Santa Fe Chicken-for 4 people

2 lbs. boneless chicken breasts or tenders, cubed

1 cup chopped onion

2 cloves garlic, chopped

3 c. tablespoons canola oil

6 oz sliced black olives

4 ounces shredded cheddar cheese

10 sprigs of cilantro or parsley (no stems)

16 oz Coyote Trail Green Chile Sauce

In a large skillet, add canola and fry chicken and onion over med Brown chicken well, (you can also grill the chicken and return to baking dish later) Add the garlic, drain (what is important or you make a sauce) and transfer to a shallow dish.

Add Coyote Trail Green Chile Sauce and mix well. Garnish with cheese, olives, cilantro or parsley Bake @ 350 for fifteen minutes until bubbles then remove the chicken and serve with beans, rice, tortillas and salad.

Fresh cream or sour cream is sometimes added as a garnish. Ole!
