Red Velvet Cupcakes surprise for Valentine's Day and other occasions These wonderful little cakes paradise red velvet have a surprise kiss candy in the center. Imagine the joy of biting into one of those cupcakes surprise Red Velvet and get a bite of a kiss jellybeans. These easy to make cupcakes are perfect for all occasions, including Valentine's Day, Wedding Shower, Wedding Cupcakes, the list could go on and on. But what about just for fun or because they are good? What better reason could there be?
SURPRISE CUPCAKES red velvet
24 Hershey's Kisses or Hugs
Dough:
1 1 / 2 sticks butter, softened
1 1 / 2 cups granulated sugar
1 / 4 cup unsweetened cocoa powder
1 tsp teaspoon baking soda
1 tsp tsp salt
v. vanilla extract 1 tsp
2 large eggs
1 cup buttermilk
2 v. tablespoons liquid red food coloring
2 v. teaspoon white vinegar
cake flour 2 1 / 2 cups
Frosting:
2 (8 ounces each block) cream cheese, softened
1 stick butter, softened
1 1 / 2 cups powdered sugar
1 tsp tea. vanilla
Trim:
colored sugar sprinkles to suit the occasion.
Preheat oven to 350 degrees. Line 24 muffin cups with paper cups enough. Unwrap candies and put one in the bottom of each muffin doubled. Set aside.
For the cakes:
In a large bowl with mixer on medium-high speed, beat butter, sugar, cocoa powder, baking soda, salt and vanilla for 2 minutes or until creamy. Add eggs, one at a time, until smooth. In a two cup measuring cup combine the buttermilk, food coloring, and vinegar until smooth. With mixer at low speed, beat flour thirds, alternating with buttermilk mixture in two additions. Beat just until blended. Place a small cup quarter of the dough over candy in each muffin cup. Pour slowly to the candy stays in the center. Bake at 350 degrees for 20-25 minutes or until toothpick inserted in centers comes out clean. Cool on rack for 5 minutes before removing from pan. Then remove cake from pan and let them finish cooling on rack.
Frosting:
Beat cream cheese and butter in a medium bowl, with mixer at medium speed until mixture is smooth and creamy. Reduce speed to low and add powdered sugar and vanilla. Increase speed to high and beat until smooth and creamy. Frost cupcakes and sprinkle with candy or other decorations to suit the occasion. Refrigerate until serving.
