Recipes Using Stevia

Does anyone have a good dessert recipes using stevia powder concentrate?

I've never heard of such things myself, but found this site -

I bought some stevia and I hate the taste. I guess the cooking can be a good way to hide this or disable, at least ... I found this online. Maybe worth a try?

Banana Bread

1 loaf - 12 servings

2 very ripe bananas, medium to large
¼ c. teaspoon stevia extract powder
½ tsp tsp stevia concentrate
1 tsp tablespoon lemon juice
2 cups whole wheat flour pastry
½ tsp teaspoon baking soda
1 tsp teaspoon baking powder
¼ c. teaspoon salt
1 / 3 cup oil
1 large egg
Half cup of yogurt or skim buttermilk plain
v. vanilla extract 1 tsp
Half cup chopped walnuts (optional)
Preheat over to 350 degrees F. Grease a loaf pan sized (7 ½ x 3 ½ "x 2 ½").

Mash bananas in a small bowl. Mix the stevia extract, stevia concentrate, lemon juice into the mashed bananas. Set aside.

Sift flour, yeast and salt in a bowl.

Beat oil and egg in a mixing bowl until creamy. Beat in the yogurt or buttermilk and vanilla. Stir the mashed bananas into the liquid mixture.

Fold the dry ingredients to wet ingredients, stirring as little as possible. Mix the walnuts just before the flour is well mixed.

Place in loaf pan. Bake for 50 minutes to 1 hour until a toothpick or a fork stuck in the middle comes out clean. Turn out the bread and let cool on rack.

Note: For maximum flavor, use very ripe bananas (brown spotted).

Blueberry Cheesecake
2 cups finely ground almonds
1 / 4 cup oil
1 / 2 teaspoon salt
4 tablespoons flour
3 (8 oz) packages cream cheese
3 eggs
2 cups blueberries
1 / 2 cup sour cream
16 packets of stevia
- Mix the almonds, oil, salt and flour and press into springform pan to form crust. Combine remaining ingredients and pour over top of crust. Bake at 400 degrees for 15 minutes, then 350 degrees for 25 minutes until top is lightly browned. Cool for one hour.

Sugar Free Chocolate Mousse
1 teaspoon gelatin
1 tablespoon cold water
1 tablespoon boiling water
6 teaspoons of stevia, a mixture or 3 / 4 c. tea extract stevia
1 / 4 cup cocoa powder
1 cup heavy whipping cream
1 tsp teaspoon vanilla
- In a small bow, sprinkle gelatin over cold water and let stand 5 minutes to soften. Add boiling water, stirring until gelatin is completely dissolved and mixture is clear. Cool slightly. In a medium bowl, stir together cocoa and stevia. Add whipping cream and vanilla. Beat at medium speed until stiff peaks form. Pour gelatin mixture and stir until smooth. Pour into serving dishes and refrigerate for at least half an hour.

Chocolate Chip Cookies
2 cups all purpose flour
3 / 4 c. teaspoon sea salt
3 / 4 c. teaspoon baking powder
1 egg
1 / 2 teaspoon white stevia powder
1 teaspoon vanilla flavoring
1 cup salted butter, softened
1 1 / 4 cup chocolate chips
- Preheat oven to 350 degrees F. Lightly grease a baking sheet and set aside. In a medium bowl, sift together the flour, salt and baking powder and set aside. Place the egg, stevia, and vanilla in a large bowl, beat well with a wooden spoon or electric mixer on hand. Slowly add the butter, continue beating until mixture is smooth, creamy. Add flour mixture to butter mixture, 1 / 2 cup at a time, stirring well with a wooden spoon after each addition. Stir in chocolate chips. v. Tea Drop dough fills the cookie sheet, about 2 inches. Bake for 20-25 minutes or until lightly browned.
