A brief history of what we call scones. They are light brown on top, and they have a light texture and soft inside and they are like a biscuit. There are several different variatins Scotland, Germany, and do not forget the Dutch. Here is a recipe I put together for you to try. They are great if you are a chocolate raspberry lover like me.

Chocolate Raspberry Scones

2 cups all purpose flour

1 / 3 cup sugar

1 tsp teaspoon baking powder

1 / 2 teaspoon baking soda

1 / 2 teaspoon salt

3 ounces butter, cut into pieces

1 / 2 cup dark chocolate chips

1 / 2 cup of milk chocolate chips

1 / 2 cup milk

1 teaspoon vanilla bean paste

1 large egg, lightly beaten

1 cup raspberry

1 large egg, lightly beaten

1 large egg

First you will preheat the oven to 375F. Then, you must first mix the flour, sugar, baking powder, baking soda and salt. Make sure you do not receive the action back to baking soda and yeast. Believe me this will be a scone tasting very bad if you do. It will be more like a brick chocolate raspberry.

You can begin to cut butter into mixture of flour with a pastry blender if you have one, or a food processor with a dough blade will work as well. If you do not, you can use two knives or a fork until crumbly. You can then add your chocolate chips in the mix the dough and give it a slight noise.

In a small bowl, add milk, vanilla bean paste and egg slightly beaten. Whatever you gave the liquid mixture a little noise, you will begin to add the liquid mixture to the flour mixture and stir until the dough comes together. Do not overmix or overwork the dough you, do not let up the scone properly during cooking if you do. The bun is very dense, so it happens.

You take the mixture crumbly dough and knead very gently on a lightly floured surface 3-5 times or until it comes together. You will then pat the dough into a circle that is about 1 inch thick. You can then cut scones into the desired shape. You can use a round cookie cutter, or any design of metal rings, or squares if you prefer.

You then place the scones on a lightly greased, or who has been prepared with nonstick spray. Make the egg wash and brush the tops with this mixture, you add a little sugar on top and cook regularly.

Bake for about 10 minutes, then turn 180 degrees and then continue for another 10 minutes. The total cooking time should take about 20 minutes or until golden brown. Remove from oven scone and drain on a rack to cool. Once they have cooled, you can add your raspberries on top for garnish sprinkled with a little sugar. These are delicious.
