Can I use a pancake mix to make cookies? I bought pecan spiced pumpkin pancake and waffle William Sonoma (OMG soooooo good) and they make great pancakes, but I would try to make them in cookies. Ideas?
You could do a test. Pancake Mix is made from flour. Find a cookie recipe and use the mixture of flour. Let us know how it works. I'm curious.
you may need to add some regular all-purpose flower to get the right consistency and eggs. Perhaps a bit of peanut butter too, and of course sugar to taste
I'm just guessing, but I wonder if you can use pancake mix instead of flour in a cookie recipe?? perhaps add the raisins and nuts??
I've never done before, but I found the following recipes:
* Cookies Cranberry Chocolate Chip *
[Note: Omit the cranberries, cinnamon and chocolate chips]
- ½ cup butter
- Sucanat ½ cup sugar or
- ¼ cup brown sugar
- 2 egg whites, well beaten
- 1 tsp teaspoon vanilla
- 1 ¾ cup Pancake Mix Waffle and Barbara
- ½ tsp teaspoon cinnamon
- ½ cup dried cranberries
Chips - chocolate chips ¾ cup sweet or carob
1) In a medium bowl mix the balance of the Earth, sugars, egg whites and vanilla.
2) Add pancake Barbara and Waffle Mix and cinnamon.
3) Stir in cranberries and chocolate chips.
4) Place tablespoon size scoops of dough on greased cookie sheets. Flatten slightly.
5) Bake 350 degrees for 12-14 minutes
Makes about 20 cookies
Alternative Health: Omit chocolate chips and substitute 1 teaspoon almond extract for vanilla

Transfer to freezer bags. During the busy holiday season, prepare hot fresh cookies in a flash. Place frozen
dough on a greased cookie sheet. Flatten slightly. Bake at 350 degrees for 15-17 minutes the oven.

I had a box of leftover pistachio instant pudding mix, and I wanted to cook something. I thought the cookies. The only thing I had handy was pancake mix. Voila! These moist, delicious cookies were born.

1 1 / 2 cups pancake mix (I used the Pioneer brand)
1 (3 ounce) package instant pudding mix pistachios
1 / 2 cup cooking oil
2 eggs
1 / 3 cup pecans (optional)
1 tablespoon cinnamon
1 tablespoon sugar

1. Preheat oven to 350 degrees.
2. Combine pancake mix, pudding, oil and eggs until a dough. Stir in pecans.
3. Form balls, I used a ball of ice cream.
4. Mix cinnamon and sugar. Roll each ball in this mixture to coat.
5. Place on an ungreased cookie sheet and flatten slightly with a fork.
6. Bake in oven for 8-9 minutes at 350 degrees until the funds are a deep golden brown.
7. Enjoy!

Make sure you use lots of Ghee sacred in this recipie
I would not recommend it but hell if you have the munchies pretty bad so good!
