Pecan BrowniesHow to make a quick and easy meal with Taco Meatball Subs and Caramel Pecan Brownies

Several times, for various reasons, you need a quick and easy meal. The next time you need such a meal try these submarines made with Taco Meatballs. This will give your usual meatball submarines another turn. Add a salad or soup. Then finish the meal with these delicious brownies with caramel and pecans.


MEATBALL SUBS TACO

1 package (1 oz) taco spices and seasonings
1 1 / 2 lb. lean ground beef
2 tablespoons plain dry bread crumbs
1 tsp tablespoons oil
1 can tomatoes (14-oz) chili style, crushed, undrained
lettuce
sub buns
grated cheese for garnish
Salsa for garnish, if desired

Mix 1 tablespoon of taco spices, ground beef and bread crumbs. Divide mixture into 24 balls. Heat oil over medium-high heat, add meatballs and cook until golden, about 10 minutes. Drain excess fat if the pan. Add tomatoes and taco remaining meatballs in the skillet. Bring to a boil over high heat. Reduce heat to low and simmer 5-7 minutes until the meatballs are cooked through.

To serve, divide the rolls in 3-4 and add meatballs, grated cheese, and lettuce. Add salsa, if desired. Or serve the salsa on the side with tortilla chips.

Caramel Pecan BROWNIES

2 / 3 cup vanilla caramels (about 12 caramels)
1 / 3 cup margarine or butter
2 v. tablespoons milk
3 / 4 cup sugar
2 Eggs
1 / 2 c. vanilla
3 / 4 cup all-purpose flour
1 / 2 c. baking powder
1 / 4 c. salt
1 / 2 cup chopped pecans

Preheat oven to 350 degrees.

In a 2 quart saucepan combine caramels, margarine or butter and milk. Heat and stir over low heat until caramels are melted. Remove pan from heat and stir in sugar. Add eggs and vanilla and stir until smooth. Set aside.

In a bowl, mix flour, baking powder and salt. Add to saucepan mixture, stirring until smooth. Stir in pecans. Turn into greased 9-inch square. mixture Bake at 350 degrees for 20-25 minutes or until toothpick inserted in center comes out clean. Cook in pan on a rack and cut into bars. Makes about 20 brownies.
