On the road, maple syrup comes in a number of qualities. In Canada, the maple syrup is divided into three categories, each containing a number of classes according to color. The first is Canada's # 1, which includes an extra light, light and medium term. Followed by Canada # 2, which contains amber and Canada # 3 which includes dark maple syrup. In the United States, the maple syrup is divided into Class A and Class B. Grade A is subdivided into light amber, medium amber and dark amber. Grade B is much darker than dark amber grade.
