Quick and Easy Low Calorie Vegetarian Recipes

The shops these days are full of all sorts of goodies suitable for vegetarians. So longer do you have to settle for an omelette or a salad. And because there is such a choice, you can choose low calorie options.

Also there are now a certain number of meat substitutes if you WAN to go this way. Vegetarian bacon - yes really - Look in the frozen food cabinet - adds that something to many dishes and I often use them even when cooking for omnivores.

Rice Salad

That made a long list of ingredients, but it is always fast and easy.

Cold cooked rice - one cup per person general
Pineapple chunks
Vegetarian bacon, 3 slices per person
A pepper, seeded, finely sliced
A little cilantro or basil

¾ cup water
2 tablespoons arrowroot powder o
The juice of one lemon
And ¾ cup finely chopped parsley (You can substitute cilantro or add a little tarragon)
pinch of salt

Be a pepper, seeded, chopped (You can use dried flakes) or two teaspoons of finely chopped sweet pepper /.
Mix water and arrowroot, and then cook until thickened. Cool and then place all ingredients in a screw top jar. Replace the lid tightly. Shake well. Will keep several days refrigerated.

Stuffed squash

Butternut or acorn squash is what I generally available, but the recipe can be used to stuff other vegetables such as peppers and eggplants (aubergines).
8 servings of stuffing.

You need for each person ½ a squash or eggplant or sweet peppers together.
½ cup raisins, raisins or chopped dried apricots
I cup vegetable broth
2 onions, finely chopped

1 clove garlic, crushed

2 apples, peeled, seeded and diced, about 1 1 / 2 Cup
I diced celery

1 1 / 2 cups bread crumbs 7 grains or other whole grain breads, bread slightly
ungreased pan

2 teaspoons salt

1-2 v. herbal tea - a mixture of herbs is good

Grated zest of one lemon

If using squash halve and remove seeds. To cut the peppers and remove seeds and keep a cap. For egg plants remove stem piece and halve, or a low light.
You may need to cut a small piece of squash and egg plants so that they sit level in dish.

Bake the vegetables cut down in a moderate oven for 50 minutes on a lightly oiled baking sheet. Meanwhile heat the stock, then use it to soak your dried fruit.

Sauted onion and celery for about 5 minutes, then add the apple and garlic for 3 or 4 minutes. Now up.
