I wish to Key Lime flavored meringue cookies (PIE do)? I have key limes in my garden (yes, I live in FL) and I would like to make Key Lime Meringue cookies flavored. My question: how much lime juice should I use? We looked at various recipes all use e meringue flavor extracts, no juice. I do not want to change the consistency of cookies by adding too much liquid! What should I do? Thank you! :)
2 egg whites
5 tablespoons sugar
1 teaspoon lime juice
The zest of one lime
Instructions
Preheat oven to 350 degrees F.
Beat egg whites at high speed until light and fluffy, (egg whites whip better at room temperature).
Continue beating and add a tablespoon of sugar at a time until glossy.
Continue beating and add the lime juice and zest.
Continue beating until stiff peaks form, not Underbeat!
Drop teaspoonfuls on parchment lined baking sheets.
Bake for 10-12 minutes at 350 until lightly browned.
Make sure to keep in an airtight container to retain their texture.
You can also place them in the oven and turn oven off and leave overnight.
