Does anyone have a sugar-free or diabetic recipe for corn muffins? I am diabetic and I found that I am very very allergic to artificial sweeteners. Does anyone have a sugar free or diabetic recipe for corn muffins using Stevia?
Even if you leave any sweetener, corn meal itself is very high in carbohydrates. I can usually get away with a handful of corn chips with salsa in a Mexican restaurant, but a corn muffin? I would not dare!
This is only one tablespoon:
Healthy Muffins Cornbread HOT
1 tsp cormeal yellow
1 c all-purpose flour
4 c. tea. yeast
1 tsp soup. sugar
½ tsp tea. salt
1 ½ milk
4 c. soup. vegetable oil
3 egg whites
Preheat oven to 375 ° F. Mix dry ingredients. Add milk and oil and mix well. Beat egg whites until stiff. Fold the dough. Pour into a 12-cup muffin pan and bake for 20 minutes.
YIELD: 12 muffins
