Economic Vintage Recipes for lentils with pasta and also a spice cake Crumb In today's society with high prices at the grocery store and unemployment figures rising, good meals are healthy and economical again emerging. Here are a couple of easy, inexpensive recipes that will not "break the bank, but will allow you to feed your family a healthy meal. lenses are particularly healthy and should be part of any healthy family menus.
LENS, with pasta
1 cup dried lentils
1 cup finely chopped onion
1 tsp tablespoon olive oil
2-3 cloves garlic, minced amount used for all tastes
1 tsp tsp coriander
8 oz pkg macaroni
salt and pepper to taste
1 tablespoon butter soup
1 / 4 cup chopped fresh parsley or 1 1 / 2 tablespoon dried parsley flakes
Soak the lentils overnight in water to cover. Add water if necessary lenses absorb some water. Cook until the lentils are tender. Drain. In a large skillet, heat oil. Sauted onions over medium heat until they are tender. Add garlic and cook until tender. Add coriander and stir in. Add the lentils and keep warm.
Meanwhile, cook the macaroni according to package directions until just tender. Drain. Toss drained pasta with the mixture of lentils. Season to taste. Stir in butter and sprinkle with parsley on top. Serve hot.
Spice Cake CRUMBS
3 cups all purpose flour
2 cups packed brown sugar
2 v. teaspoon baking soda
2 v. teaspoon cinnamon, nutmeg, cloves
1 tsp tsp salt
1 cup shortening
2 eggs
2 cups buttermilk
2 v. tablespoons molasses
In a bowl, combine flour, brown sugar, baking soda, spices and salt, cut in until mixture resembles coarse crumbs reducing. Remove and reserve 1 cup of mixture for topping. In another bowl, beat eggs, buttermilk and molasses. Add the remaining flour mixture. Mix well. Pour into a baking pan 13 x 9 inches. Sprinkle reserved topping. Bake at 350 degrees until a toothpick inserted in center comes out clean, about 35-40 minutes.
