Pumpkin Cheesecake

CRUST
1 1 / 2 cups graham cracker crumbs
1 / 3 cup butter or margarine, melted
1 / 4 cup granulated sugar
CHEESECAKE
3 packages (8 oz each cream cheese), softened
1 cup granulated sugar
1 / 4 cup packed light brown sugar
2 large eggs
1 can (15 ounces) Libby's ® 100% Pure Pumpkin
2 / 3 cup (5 fl-oz) NESTLa� ® ® Carnation Evaporated Milk
2 tablespoons cornstarch
ground cinnamon 1 1 / 4 c. Tea
1 / 2 teaspoon ground nutmeg
TOPPING
1 jar (16 ounces) sour cream, at room temperature
1 / 3 cup granulated sugar
1 teaspoon vanilla extract
Libby's ® 100% Pure Pumpkin

oven to 350 degrees F.

For the crust:

Graham cracker crumbs, granulated sugar and butter in a medium bowl. Press onto bottom and 1 inch square springform 9 inches. Bake in oven for 6-8 minutes (do not let brown). Cool on rack for 10 minutes.

Cheesecake:
BEAT cream cheese, granulated sugar and brown sugar in a mixing bowl until frothy great. Add eggs milk, pumpkin and evaporated. Add cornstarch, cinnamon and nutmeg and beat well. Pour over crust.

Bake for 55-60 minutes or until Edge is that the center still moves slightly.

For the filling:
Mix sour cream, granulated sugar and vanilla in small bowl and mix well. Spread over surface of warm cheesecake. Bake in oven for 5 minutes. Cool on a rack. Refrigerate for several hours or overnight. Remove sides of pan.

Serving Size: 16

This is a recipe for "Caramel Apple Cheesecake" ..... a hit at every party I need to:

1 (21 ounce) can apple pie filling
1 (9 inch) graham cracker crust
2 (8 oz) packages cream cheese, at room temperature
1 / 2 cup sugar
1 / 4 c. Tea Vanilla extract
2 eggs
1 / 4 cup caramel topping
12 pecan halves, plus 2 tablespoons tablespoons chopped pecans

Preheat oven to 350 degrees F.
Reserve 3 / 4 cup of the apple filling and set aside. Pour remaining filling into crust. Beat together cream cheese, sugar and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.

Bake for 30-35 minutes or until center of cake is set. Cool to room temperature.

Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute or until spreadable. Pour the caramel-apple mixture on top of cake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until serving time.

To avoid cracking the top, do not overmix the dough, and do not open the oven door while the cake baked or cooling inside the oven.

For the dough:

1 1 / 4 cups bread crumbs, nuts (all 10 crackers)
