Vermont Pumpkin Cranberry Bread
Servings: 8_Serving size: 1 slice



You will need:
2 cups all purpose flour
2 / 3 cup firmly packed dark brown sugar
1 / 2 cup sugar
2 v. teaspoon baking powder
1 / 4 c. teaspoon salt
1 3 / 4 c. tsp pumpkin pie spice
1 cup canned pumpkin
1 / 4 cup vegetable oil
1 1 / 2 tsp tsp vanilla extract
3 fresh egg whites Eggology, lightly beaten
3 / 4 of cranberries, coarsely chopped
1 / 4 cup chopped pecans
Cooking Spray



INSTRUCTIONS
* Combine first 6 ingredients in a large bowl and make a well in center of mixture.
* Combine pumpkin, water, oil, vanilla and egg whites, add to dry ingredients, stirring until dry ingredients are moistened.
* Stir in cranberries. Pour batter into a loaf pan 9 x 5 inches with cooking spray and sprinkle pecans over batter.
* Bake at 350 degrees for 1 hour and 5 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack 10 minutes, remove from pan and cool completely on rack.


Bravado Junior Mint Brownies
Serving Size: 1 brownie. Yields 16 servings: 16_Notes: Two large (1.5 ounces) or 6 candy peppermint patties miniature chocolate covered (such as York) may be substituted for 32 junior mints. _Yield: 16 brownies.



You will need:
1 / 4 cup butter or stick margarine
3 ounces (approximately) 32 small creamy mints in pure chocolate (such as Junior Mints)
1 cup all-purpose flour
1 / 4 c. teaspoon baking soda
1 / 8 c. teaspoon salt
2 / 3 cup sugar
1 / 3 cup unsweetened cocoa
3 oz fresh egg whites Eggology
Cooking Spray



INSTRUCTIONS:
Preheat oven to 350 degrees *.
Coat bottom of an oven * 8-inch square pan with cooking spray.
* Combine butter and mint in a glass measuring cup 2; microwave high level in 30 seconds or until tender. Blend until smooth and set aside.
* Spoon flour lightly into a measuring cup and level with a knife. Combine flour, baking soda and salt in a bowl.
* Mix sugar, cocoa and egg whites in a large bowl and beat at medium speed of mixer until well blended.
* Add the mint mixture and beat well. Add flour mixture and beat on low speed just until blended. Pour batter into prepared pan.
* Bake at 350 ยบ for 20 minutes or until a toothpick inserted in center comes out clean and cool completely on rack.
