A Twist on fancy box Brownie Mixes

As a mother and grandmother busy, I did not always have time to cook from scratch. When I'm in a hurry, I'll reach for a box of brownie mix. Yes, I think when you make them from scratch, they taste better, but sometimes it's just not possible to spend 2 hours of cooking.

When I use box mixes, I usually add goodies to make it even better. With us, the more goodies I can load into the dough, the better.

Before I begin, I would like to share with you some important tips.

1. Do not overmix the dough. It is normal to have some small pieces.

2. Do not overcook. Remove the pan from the oven at the recommended time. They finish cooking in the pan.

3. Let cool before cutting into squares. Square Store in an airtight container.

Here are three recipes that all use a box brownie mix classic.

Rocky Road Torte

1 package fudge brownie mix
1 (8 ounces) milk chocolate almond bar
7.5 oz jar of marshmallow fluff
cream 1 1 / 2 pints chocolate ice, softened

Prepare brownie mix as directed on the box. Pour into ungreased 13 x 9 "baking pan. Beat cream cheese in a blender until smooth. Add sugar, stir until smooth. Add egg and vanilla, mix again. Pour the cream cheese mixture over brownie mixture, cut the dough with a knife several times for marble effect. Bake at 350 degrees for 35 minutes or until down.

Peanut Butter Cup

1 package brownie mix
1 cup miniature marshmallows
1 1 / 2 cups peanut butter cups mini

Prepare brownie mix as directed on the box. Cut the mini peanut butter cups in half, mix the dough with miniature marshmallows. Pour into ungreased 13 x 9 "baking pan. Bake at 350 degrees for 35 minutes or until done.
