Does anyone have a good recipe for a banana cake for a birthday? My boyfriend loves anything banana flavored, and banana bread. Tomorrow is his birthday and I would like to incorporate into his birthday cake. Most recipes I find are something like a banana bread shaped into a cake pan. I want something soft and light and delicious, that I can put gel or cream and use it for a birthday cake. If you have a recipe, please post. Thank you!
It is a good person and delicious;
3 / 4 cup butter
2 1 / 8 cups white sugar
3 eggs
2 teaspoons vanilla extract
3 cups all purpose flour
1 1 / 2 tsp teaspoon baking soda
1 / 4 c. teaspoon salt
1 1 / 2 cups buttermilk
2 teaspoons lemon juice
1 1 / 2 cups mashed bananas
1 / 2 cup butter softened
1 (8 oz) cream cheese, softened
Confectioners 3 1 / 2 cups of sugar '
1 teaspoon vanilla extract
Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 9x13 inch pan. In a small bowl, mix mashed bananas with lemon juice and set aside. In a medium bowl, combine flour, baking soda and salt. Set aside.
In a large bowl, cream butter 3 / 4 cup and 2 1 / 8 cups sugar until light and fluffy. Add the eggs one by one, then stir in 2 c. teaspoon vanilla. Beat in flour mixture alternately with buttermilk. Stir in banana. Pour batter into prepared pan.
Bake in preheated oven for 1 hour or until a toothpick inserted in center comes out clean. Remove from oven and place it in the freezer for 45 minutes. This will make the cake very moist.
For the frosting: In a large bowl, cream 1 / 2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add powdered sugar and beat on low speed until blended, then on high until frosting is smooth. Spread on cooled cake.

I can give you quickly and easily, but its very rich and moist (a family secret).
Mix one packet of instant banana pudding as directed. Once cooled to room temperature, add an egg and a box of either banana, vanilla, caramel cake. Pour into molds and bake according to package directions. I would like to add nuts to the top of the mine. Good luck.

Cake:
Butter, for greasing pans
3 cups all purpose flour, and more for pans
2 cups sugar
1 teaspoon baking soda
1 tsp teaspoon ground cinnamon
1 / 2 teaspoon salt
3 eggs, beaten
3 / 4 cup vegetable oil
4 large ripe bananas, mashed
1 cup chopped pecans
1 1 / 2 tsp tsp vanilla extract
Frosting:
1 (8 oz) cream cheese, at room temperature
1 / 2 cup butter (1 stick) at room temperature
1 pound confectioners' sugar, sifted
1 teaspoon vanilla extract
1 / 2 cup chopped pecans
Grease and flour 3 (9 inch) round cake pans and set aside. Preheat oven to 350 degrees F.
Cake:
In a bowl, mix together flour, sugar, baking soda, cinnamon and salt. Add eggs and oil and mix until dry ingredients are moistened, do not fight. Add bananas, pecans and vanilla. Divide batter between prepared pans and bake for 23-28 minutes or until a toothpick inserted in center comes out clean. Cool the cake layers in the kitchen for 10 minutes, then unmold onto a rack to cool completely. While the cake cools, make the icing.
Frosting:
In a bowl, combine cream cheese and butter. Gradually add sugar, confectionery and beat until light and fluffy. Beat in the vanilla. Stir in the pecans, or reserve them to sprinkle over the frosted cake. Fill and frost cake when completely cool
