Has anyone had a good curry eggplant recipe? Something relatively simple and fast
I found 16 recipes for eggplant curry www.recipezaar.com FREE! go, but one that seems fairly simple one:
Ingredients
1 green pepper, cut into strips
1 lb. eggplant, cut into strips 1 inch
12 ounces tomatoes, peeled and sliced
1 large onion, sliced
2 clove garlic, minced
1 / 2 teaspoon ground ginger
1 tablespoon oil
4 oz cream of coconut
1 tablespoon lemon juice
1 teaspoon turmeric
mustard powder 1 / 2 teaspoon
1 / 4 c. teaspoon cayenne pepper
1 / 4 c. teaspoon salt
5 fluid ounces milk
Instructions
1Heat oil in a frying pan and fry the eggplant strips until light brown and remove from pan.
2Add onion, garlic, ginger and green pepper in skillet and fry for 3 minutes, stirring all the time.
3Now add cream of coconut, lemon juice, turmeric and mustard powder and mix.
4Add the cooked eggplant, tomatoes, salt, pepper and milk, bring to a boil, reduce heat and simmer for 10 minutes.

Eggplant / curry?
try google "melongena" (which is a Caribbean word eggplant)
the link is one of choka - I would not recommend changing that to add the curry, but he had other income on the side
be sure to slice and salt and sweat for your melongena for 10 minutes to prepare - PPL had an allergic reaction to this product when it is not salty, (dryness of the throat grow)
